You will need:
1lb of dried mixed fruit (e.g sultanas, currants, raisins and glace cherries)
6oz soft brown sugar
8 floz strong cold tea
1 egg
8oz self raising flour
1 teaspoon mixed spice
Method:
- Put the fruit, sugar, tea, mixed spice and egg into a bowl.
- Leave mixture to soak overnight.
- The next day, fold in the flour and place in a greased loaf tin.
- Bake in a pre-heated oven at 120 degrees‚ Celsius for approximately 90 minutes (or until a skewer pulls clean from the middle of the cake).
