You will need:bara brith recipe

1lb of dried mixed fruit (e.g sultanas, currants, raisins and glace cherries)
6oz soft brown sugar
8 floz strong cold tea
1 egg
8oz self raising flour
1 teaspoon mixed spice


  1. Put the fruit, sugar, tea, mixed spice and egg into a bowl.
  2. Leave mixture to soak overnight.
  3. The next day, fold in the flour and place in a greased loaf tin.
  4. Bake in a pre-heated oven at 120 degrees‚ Celsius for approximately 90 minutes (or until a skewer pulls clean from the middle of the cake).
