On Tuesday 17th October 2017, Carden Park’s General Manager Paul Bayliss took away the prestigious accolade of Independent Hotelier of the Year at the Independent Hotel Awards in Olympia, London.
Having re-joined the hotel in September last year, Paul has been heavily instrumental in the sensational celebrations for the now independent hotels 20th anniversary. As well as this triumph, Paul has also recently been appointed chair of Cheshire’s Hoteliers’ Association.

“It was the first hotel I worked in after leaving the army and after I left here in 2009, I discovered how good it had been. For me Cheshire is absolutely unique as it has some of the very best hotels and resorts large and small in the UK hospitality industry and a rare mix of city centre and country properties.”
On his most recent triumph, Paul speaks with lots of enthusiasm.
“I’m absolutely amazed that I’ve won. This [the Olympia] was the first place I won an award as a young chef, so to get this is splendid.”
After a highly successful career in HM Forces as a world-class chef and receiving an MBE for his services to people development, Paul’s hotel career spans 10 years and includes leading three of the most prestigious large hotels in the North, including The Midland Hotel in Manchester. As well as this, he also chaired the Manchester’s Hoteliers Association for two years between 2014 and 2016, during which time membership increased significantly and he helped enhance the region’s reputation on a national stage by speaking about tourism and hospitality in the Houses of Parliament during his tenure.
Paul is equally excited about future plans at Cheshire’s Country Estate:
“The hotel is going through some exciting times and it provides a huge opportunity going forward. We are about to announce a £12m spa and everything else is being refurbished. There’s a £200k Orangery being built in the next few weeks, all the bedrooms are being re-done and so are the conference facilities. Our ambition shows no bounds and I think we’re perfectly positioned to be the hotel of choice in the UK. My plans are to stay here for the long haul. After all, why wouldn’t I want to be looking after a place like this?”
Paul was selected from online votes cast by the general public and industry professionals on the run up to the Independent Hotel Show.
