Step into the season with our vibrant new menu at The Vines. It’s a celebration of the freshest produce and bold, seasonal flavours. Carefully curated to highlight the best of summer, the menu features beautifully balanced dishes such as roasted monkfish, truffle-stuffed chicken breast and a delicious strawberry and vanilla tart. We have created a refined take on a classic: beef tartare made with premium Welsh beef fillet. The dish carries an elegant Asian influence, a nod to my time cooking at the Sydney Opera House under acclaimed Chef Matt Moran. Served with delicate miso crackers, this starter delivers a beautiful balance and a acts as a very personal reflection on my culinary journey.
Simple clean and elegant. I feel this dish is a true celebration of ingredients. The lobsters within the main course is caught on the North Wales Coast, just a stone’s throw from where I grew up. This dish is served with beautiful fresh peas and broad beans, in the prime of their season. This is then balanced with a preserved elderflower vinegar, picked from the Cheshire Hotel grounds on a sunny day to ensure maximum flavour with high pollen count.
To end on a high note, we offer a rich and indulgent dark chocolate mousse. The deep, bold flavours of the chocolate are beautifully matched by a vibrant cherry sorbet, cutting through the intensity and leaving a refreshing finish. A strong, satisfying conclusion to a summer dining experience.
